Whortleberry (Vaccinium myrtillus L.)

Fruits of whortleberry ordinary contain carbohydrates (glucose, Saccharose, fructose, pectins), organic acids (lemon, milk, apple, amber, sorrel), vitamins (A, B, C, PP), flavonoids (giperin, quercetin, astralagin), anthocyanin (delfinidin, malvidin, idain, mirtilin), phenols, mineral matters macro and microelements (iron, manganese, selenium, cobalt, copper, gold, silver, zinc). The fruits of whortleberry contain a lot of tannic matters, routine.

In the complement of berries whortleberries enter Saccharum (to 6 %), lemon, apple, milk, amber, sorrel, quinine acids (1-1,2%), glucosid gliconin and dye of mirtilin, tannic and pectin matters, mineral salts, vitamins of A, C, В1, В2, PP.

Blackberry (Rubus fruticous)

Garden-stuffs contain to 8% Saccharum (mainly glucose and fructose), to 1,8% pectin matters, to 1,4% acids among which a lemon prevails, vitamins A also C. In seed there is more than 12% fatty oil. Leaves of blackberry are rich in tannic matters (to 22—24%) which consist mainly of leucoantocyanides and flavonols, vitamin C, amino acid and mineral matters.

Sea-buckthorn (Hippophae rhamnoides)

Fruits of sea-buckthorn are natural polyvitaminic concentrates. In them there is a provitamin A (to 8 mg %), vitamins C (200 - 350 мg %), E (28 мg %), В1, В2 (0,12 мg %), PP, folic acid. At the pulp of sea-buckthorns fruits there are fats and aromatic oil (to 9%), Saccharum (to 2,5%), apple and lemon acids (to 4%), tannic and pectin matters.

Cow-berry (Vaccinium vitis-idaea)

Fruits of cow-berry contain pectin and tannic matters (0,32 % ), glucosid arbutin and vaceinine, provitamin A, vitamin C (7-23 мg %). The seed of cow-berry contain 32% of fat, quick-drying oils.

Chokeberry (Aronia melanocarpa)

Fruits of chokeberry contain Saccharum (to 10%), apple and other organic acids (to 1,3 %), pectins (to 0,75%) and tannic matters (to 0,6%). They have also vitamins (мg %): ascorbic acid 15; matters with Р-vitamin activity - to 2000; carotin - about 2; riboflavin 0,13; folic acid 0,1; nicotine acid 0,5; tocopherols 1,5; phylloquinone 0,8; pyrodocsin 0,06; cyanin 0,3; thiamine 0,01 and others. In the pulp of fruits found also amygdalin, cumarin and other isosteric compound. From microelements especially selected ferrum - 1,2 mg, manganese – 0,5 and an iodine is 5 – 8 mg in 100 g of pulp.

Wild ash (Sorbus)

People start to gather fruits from September. They have weak smell, taste is bitterly sour. Big amount of carotin, ascorbic acid (to 92 мg %), vitamin P, essential oil, apple, lemon acids, bitter and tannic matters, Saccharum, pigments, alcohol sorbite, antibacterial matters is found in fruits pulp. In leaves - ascorbic acid (to 84,2 мg %). Fruits of wild ash are used in medicine as a polyvitaminic mean, for a prophylaxis and treatment of avitaminosis. Enter in the complement of vitamin collections.

Black elder (Sambucus nigra L.)

The fruits are rounded blackly violet, berrylike edible stone-fruits.

Flowers contain bitter glucosid sambunygrin, routine, choline, apple, valerianic, vinegar, chlorogenic, coffee acids, vitamin C (82 mg %) and essential oil (to 0,32 %). There is sambunygrin in leaves, hexenic and glycol aldehydes, carotin, vitamin C (to 280 мg %) and essential oils. Berries contain the vitamin C (to 49 мg %), carotin, chlorides of glycosid cyanidine, tannic matters, carboxylic acids and amino acid.

Blueberry (Vaccinium uliginosum L.)

There are in berries carbohydrates (5,3-6,8%), lemon, apple, sorrel acids (to 2%), pectins (0,5-0,6%), tannic and paint matters (to 0,2 %), ferrum and mangan. Seeds contain 28-32% of oil. Berries have high enough maintenance of vitamin C (to 28 mg %), carotin, vitamin PP which is saved at processing.

Black currant (Ribes nigrum L.)

Berries of currant contain vitamin C – to 400 мg %, A -0,06 to мg %, P- 1,2-1,5 mg %, carotin - 0,7 мg %, different Saccharum, - from 4,5 to 16,8 % (mainly glucose, fructose); organic acids - 2,5-4,5% (lemon, apple), proteins - 1%, pectin matters - 0,2-0,8%, tannic - 0,39-0,43%, cyanidine, delphinidin and glycosid, essential oils. Mineral composition of berries are (in мg %): sodium - 32, potassium - 372, calcium - 36, magnesium - 35, phosphorus - 33, ferrum - 1,3.

Raspberry (Rubus idaeus L.)

Fruits contain:
— vitamins: ascorbic acid (vitamin C), vitamins of group B (В1, В2, В6), PP, E, provitamin A(carotin);
— Saccharum: glucose (to 4,3%), fructose (to 8%), saccharose (to 6,5%);
— organic acids: lemon, apple, salicylic, wine, ant, kapron;
— alcohols (wine, isoamyl);
— cetone (acetone, ionone).

Moorberry (Охуcoccus quadripetalus Gilib., Vaccinium (oxycoccus) palustris Pers.)

Berries of moorberry contain Saccharum (3-6%), pectin matters, vitamin C (10-22 мg %), organic acids: lemon (12,8%), oxoglutaric, quinine. In addition, they are rich in potassium and iron. From specific matters which operate, berries contain glycosid vaceinine (6-benzoylglucose), panflavin acid.

Viburnum (Viburnum Opulus L.)

Fruits of viburnum contain Saccharum (5-6 %), proteins (0,37 %), isovalerianic and vinegar acids (2,56%), tannic and paint matters, vitamin С. Except Saccharum and organic acids there is tannin, pectin, tannic matters, piceous ethers and vitamins. But most valuable, presumably, here is viburnyn. That adds berries annoying bitter taste, this matter is especially healthful.
